Protect the heart and keep one happy

Maurice Mességué, a French herbalist and author of several books on herbal medicine and cooking with herbs, recommended taking Linden Tree Tea (or Tisane au Tilleul as the French say) frequently to prevent disease. He claimed that it will help “protect the heart and keep one happy”. Who am I to argue?

Unfortunately we don’t have a Linden tree at Les Pierres, so when a friend announced that her two trees had started blossoming we immediately went over and started harvesting, surrounded by a concert of buzzing bees, who also love Linden so much.

We got a supply big enough to keep the dehydrator busy for days, but the abundance of flowers has made me greedy. Or was it the intoxicating smell ? Anyway, I might soon go back for more…
